Ingredients
⅓ cup unsalted butter, melted
4 sheets gelatin
2 cups cottage cheese
8 oz cream cheese
1 cup powdered sugar
3 lemons (zest and juice)
1 cup graham cracker crumbs

Instructions

1. Crush the graham crackers and mix with the melted butter. Press the mixture firmly into the bottom of a 7-inch (20 cm) springform pan and refrigerate for 30 minutes.
2. In a large bowl, combine the cream cheese, cottage cheese, powdered sugar, and the zest of two lemons. Soak the gelatin sheets in cold water according to the package instructions, then gently heat until melted. Mix the melted gelatin with the juice of all three lemons and add it to the cheese mixture.
